Bounty Ball Recipe
These chocolate and coconut snacks are the perfect energy boost in between exercise!
Makes 20 small balls or 10 larger
10 minutes prep time
15 minute rest time
Ingredients:
70g desiccated coconut
135g whole unsalted almonds
10 pitted medjool dates
1 tbsp of almond butter
2 tsp of cocoa powder
pinch of sea salt
Method:
- Place the almonds and desiccated coconut into a food processor and pulsing until a flour forms
- Add the almond butter, cacao powder, salt and dates and pulse again until a sticky paste forms
- Scatter a little desiccated coconut over a baking tray
- Using a large spoon, scoop out equal amounts of the mixture and roll into small balls using your hands
- Once you have your balls, roll them in the desiccated coconut to form a coating on the outside
- Place in the fridge to firm up before enjoying
